Summer Time

Summer is fast approaching, and we all know that with summer come hot, long days. This is one of my favorite times of year to get out and enjoy bright sunny days. It is always nice to sit in the shade and have a nice refreshing drink that can help keep the temperatures from being too harsh. This year I plan to sit out and enjoy, but with a new twist on the all time favorite lemonade in the shade. A new favorite recipe for Peach Lemonade Smoothies is sure to have you enjoying your summer time days.
This recipe for Peach lemonade smoothies is very simple. You will only need three ingredients and a blender. You can use fresh peaches or canned peaches for this recipe; it really does not matter.

Ingredients:
One large can of peaches
One container lemonade concentrate
Ice

Blend together all ingredients. The amount of ice depends on how thick or smooth you want your drink.

This recipe is great because it only takes a few minutes and you are ready to enjoy your afternoon relaxing in the shade. These smoothies are also great for when you have friends or family over for evening outdoors. Everyone will enjoy the nice refreshing taste of these smoothies. You can’t go wrong with a cool drink and a nice summer day.

Mother’s Day Celebrations

Mother’s Day is quickly approaching. I know that many people want to do something special for their mothers on this day. A great way to express how much you love her is by cooking her a meal. This is a really touching way to show her how much you really appreciate all the hard work that she does for you on an every day basis. It can be difficult for children to see how hard parents work to give them the things that they want until they have a family of their own. I really enjoy doing something special for my mom on mother’s day because I see how she worked when I was a child.

If you can not manage to make your mother a dinner on mother’s day, then arrange for a special dinner some place that she really enjoys going. A nice restaurant is also a great option for those that have to travel to see their mothers. This would keep her from worry about how to feed all the people that will probably be in her home on this particular day. She will greatly appreciate the effort. Even young children can make something special for their mothers. A special breakfast that is made only by the child is very nice as well even if it is just cereal. It is definitely the thought that matters most on this day. Most moms just want the people that they love to acknowledge all the hard work that goes into caring for a family.

For those who want to make their mother a meal for this great day of recognition here is a simple, but tasty recipe to make for your mother.

Grilled Rosemary Chicken with whole potatoes

Ingredients:
4 chicken breasts
1 cup melted butter
1 tablespoon of rosemary
1 cup grated parmesan cheese

Combine melted butter, rosemary and half of the cheese. Pour the combined ingredients over the chicken breast. Add the potatoes to the baking pan and bake at 400 degrees for 45 minutes or until the meat no longer pink. Remove the dish from the oven and sprinkle the remaining cheese on top. Let cheese melt before serving.

roast_beefDo you ever get tired of planning out your dinner every night? You constantly have to run to the market to pick up a few more things that you need. Does it seem that you never really end your day on a relaxing note because you just go, go, go all the time? I have a perfect solution for you then. I was watching a cooking show about just this thing, and the best thing to do is make a big weekly meal.

This may sound harder than it really is when you think about how much food your family eats in one week. I was surprised at how simple it really was to create and plan an entire weeks worth of meals around one kind of food. What you do is cook a really large piece of meat such as a roast. You use the left over roast to create four meals for the rest of the week. I will show you an example menu for a weeks worth of meals from one roast.

Day One: Roast cooked with vegetables and gravy
Day Two: Slice the extra roast and make smothered sandwiches and French fries.
Day Three: Break apart some of the roast and add BBQ sauce. Place on top of a baked potato to make loaded baked potatoes for everyone.
Day Four: Take the roast and gravy and simply add noodles to make Beef Stroganoff.
Day Five: Shred the last of the meat and add a packet of taco seasoning for soft tacos.

This technique is really simple and allows you know exactly what you are going to have for dinner every night with no extra planning needed. You can do this with other kinds of meat as well. You just want to make sure that you start with enough to make it through out the week

Cooking Fish on a Grill

Just the other day my family had a real craving for some trout. I think it must be the warmer weather coming out. We all have the fishing fever and there is just something exciting about pulling out the grill and cooking some good fish on it. Last week we pulled ours out. Fortunately we had a local market that had some trout on sale and we were able to cook it that evening. Below are some tips to cooking fish on a grill.

Tip #1: The Hinged Wire Grill Basket

Depending on what type of fish you are cooking, you may need one of these. There are some firm types of fish that can be cooked directly on the grill such as tuna and salmon. However, fish such as catfish, snapper, and trout are probably better cooked in this basket. Otherwise, you may lose part or all of the fish through the grates.

Tip #2: Cook Slowly For Best Results

Fish cooks very quickly. Assuming you are cooking a thin piece, it can be done in a matter of just a few minutes even when it is cooked a medium-low heat. Fish should be carefully monitored regardless of what temperature your grill is at.

Tip #3: Minimize flipping

Unfortunately, fish is very delicate. Unlike a stake or a burger where you can flip it back and forth, you should really avoid doing this while grilling fish. The reason is that fish will fall apart if you keep flipping it. Most fish is too soft to withstand it.

I don’t know if you have ever heard of Bakerella. Bakerella is a lady that makes some of the most amazing treats. She has really creative ideas that are great for any kind of celebration or party.

The cake pops make for great decorating at parties not just snacks. Cake pops have a very simple recipe and are easy to make. Anyone can make these delicious treats.

Once you have tried these treats, you will want to make them all the time. Your guests are guaranteed to request that you make them over and over again. This is a really simple treat will have you amazed at how easy they are to put together.

There are a few different things that you will need in advance to create your treats, but they are easy to find. You can go to any craft shop and find a Styrofoam board. You will also need to find lollipop sticks for your cake pops to go on. Use the lollipop sticks to pock small holes into the Styrofoam board so that your cake pops can dry standing up. This will allow them to keep their shape.

A Great Way to Start the Day

Breakfast is the most important meal of the day. There are too many people that just do not have time to stop and make a big breakfast for the family every morning. A big traditional breakfast would take way too long for most people especially those who are trying to get a couple of kids off to school though there are some ways of getting a good breakfast fast and on the go. This does not mean going by a fast food joint.

A great breakfast on the go is a quesadilla omelet. These are nice and easy to take with you in the car and do not take very long to make. If you have about fifteen minutest to spare, then you have enough time to make about four of these delicious quick breakfast treats.

All you need for this breakfast treat is eggs, cheese and tortillas. If you have extra ingredients that you like feel free to throw those in as well. You simple make a five egg omelet. This sounds like a lot, but this will be used for four quesadillas. Once the omelet is finished cooking, you will cut into fours. Place one fourth into one of the tortillas and you have your omelet quesadilla to go. You can add more cheese on top of the egg to make the egg and tortilla stick together better. If you wrap them in foil, they will stay hot for along time.

Monterey Chicken

This is a chicken recipe that is a favorite around my home. It really gives the chicken a little extra kick.chickenbreast You can add as little or as many ingredients as you want. It really just depends on what kind of flavor you are looking for. The spices you use will really change the chicken from being just average to exceptional. I will give you the basic recipe so that you can add your own touch to make it just right for your family.

You will need chicken breast that has been rolled to about ½ inch thickness. This will allow it to cook evenly. If you like things a little spicy, you will probably want to use some cayenne pepper instead of regular black pepper. I also like to use pepper jack cheese, but any kind of cheese will do for this particular dish.

Ingredients:
6 chicken breasts
6 cheese slices (whatever is your favorite)
6 pieces of bacon
Cayenne pepper (season to taste)
Green onions
Tomato
Mushrooms

Begin by rolling the chicken to the correct thickness. Season the chicken the way you normally would just add the extra pepper at the end. Place in a hot skillet and let brown on both sides. Once the chicken is brown, bake it at 400 degrees for about 15 to 20 minutes. During the last five minutes of bake time, add the cheese slices to the chicken. While the chicken is baking, cook the bacon until it is crisp. You are going to break it into pieces so that you can sprinkle it on your chicken. This is also a good time to cut up your other ingredients that go on top. Once the cheese had melted, take the chicken out of the oven and sprinkle with the bacon. This will help keep the bacon pieces on top of the chicken. Simply, add the rest and enjoy.

Thick and Juicy Homemade Burgers

Homemade burgers are a great way for any one to be creative. I like to come up with many different ways that I can change a regular burger into something really delicious. It will usually start with what kind of cheese will be added to the burger.juicyburger I then think of add-ons that will compliment the kind of cheese that I have chosen.One of my favorite burgers is the Swiss, bacon, mushroom, and onion burger. It has amazing flavor to it.

This recipe has calls for about one pound of ground beef. This will make four quarter pound burgers. I will usually add two pieces of Swiss cheese to each burger. You will definitely want at least two pieces of bacon per burger. The mushrooms are sliced so you will need about five or six medium mushrooms to have enough for each burger. A large onion will be good. You will want to sauté the onion while the meat is being cooked.

Ingredient List:
One pound ground beef
8 pieces Swiss cheese
8 pieces of bacon
5 or 6 medium mushrooms
One large onion

Place the each quarter pound burger on a grill set to about 350 degrees. All grills are different so some adjusting may need to be done so that you do not burn the outside of the meat. Cook for approximately six minutes on each side. This should allow the middle of the burger to completely finish cooking. While the meat is cooking, you will want to sauté the onions and mushrooms. This will give them a sweeter flavor. When you cook the bacon, it should have a little crunch to it as well. Once the burgers are finished cooking, simply put them together and enjoy.

Spicy Cajun Chicken

This recipe has always been a hit when I make it for large get-togethers. The chicken is juicy and the taste is wonderful. You get a rotisserie style taste without having to cook for hours. The recipe is really simple because you really only have a couple of ingredients to prepare.

cajunchickenYou will need chicken legs with the skin left on or removed. This part is really your choice, but the skin will make the chicken juicer. A Cajun spice of any kind will work as long as it has a great flavor to it. This is where you might have to do a little taste testing in advance. It might take you several tries to find one that you like. I always use McCormick Cajun seasoning. It has just the right amount of spicy taste without being too much. The last ingredient is butter or margarine. This will also help keep your chicken juicy while it cooks.

Ingredient List:
Chicken legs with or without skin
Cajun Seasoning
Butter or Margarine

Spicing up your chicken is very simple. Pour some of the Cajun seasoning into a bowl and roll the chicken around in it. Cover the chicken completely. This will ensure that the flavor will be on all sides of the chicken. Place in a baking dish with the butter and cover with foil. Bake at 400 degrees for 50 to 60 minutes. You will want all the juices from the chicken to run clear before it is finished.

Cinnamon Rolls

Cinnamon rolls are a delicious treat that everyone is sure to enjoy. Many people think that cinnamon rolls are too hard to make. That it takes way too long. The following recipe will definitely change your mind about how hard the process is. This recipe is easy and it does not take a whole lot of time. You will not be spending hours in the kitchen.

You only need a small group of ingredients to get started. These ingredients are easy to find and you may already have them in your pantry at home.

1 yellow cake mix
8 oz. package of quick rise yeast
2 ½ c. hot water
5 c. self rising flour
Cinnamon
Brown Sugar
½ cup of Butter or Margarine

Mix the yeast with the hot water. Once the yeast is dissolved add the cake mix to the yeast mixture. Stir until the yeast and the cake mix are combined. Combine flour and work into a dough. Place dough in a large bowl and let rise for approximately 20 to 30 minutes or until double in size. Once dough is done rising, knead on a floured surface for about 15 minutes. Divide in half and roll each half about a ¼ in. thick.

Spread butter on the rolled out surface of the dough. Be sure to spread ¼ in. from sides. Sprinkle desired amount of cinnamon and brown sugar. Don’t be afraid to cover the dough with a lot of cinnamon and sugar. This will make them extra gooey. Roll the dough up into a long single roll. Cut about every ½ in. to make cinnamon rolls. Place on a greased baking pan. Bake for approximately 12 minutes at 400 degrees.
