You can add as little or as many ingredients as you want. It really just depends on what kind of flavor you are looking for. You will need chicken legs with the skin left on or removed. This part is really your choice, but the skin will make the chicken juicer. A Cajun spice of any kind will work as long as it has a great flavor to it. This is where you might have to do a little taste testing in advance. It might take you several tries to find one that you like. I always use McCormick Cajun seasoning. It has just the right amount of spicy taste without being too much. The last ingredient is butter or margarine. This will also help keep your chicken juicy while it cooks.
